SPice Rubbed Halibut with Mango Pineapple Salsa and Pea Puree
Spice Rub:
1 tbsp brown sugar
1 tbsp paprika
1/2 tsp cayenne
1/2 tsp garlic powder
1 tsp pepper
1/2 tsp kosher salt
2 tbsp olive oil
1 and 1/2 lbs halibut
Mix all the spices together and the olive oil until it is blended into a paste. Spread it all over the halibut before cooking. Add olive oil to a sauce pan on medium heat. Cook the halibut for 5-8 mins. When you start cooking fish it's shiny and translucent. When it is done, it will be opaque.
Mango Pineapple Salsa
1/2 cup mango, diced
1/2 cup pineapple, diced
1 avocado, diced
1 fresno pepper, diced
1/2 jalapeno pepper, diced
Handful of basil, chiffonade
1/2 cup cilantro, chopped
juice of 2 limes
splash of olive oil
Chop everything together and mix to combine. You can serve this salsa over chicken, fish, tacos or just simply with tortilla chips.
Pea Puree
3 cups frozen peas
2 tbsp butter
2 garlic cloves, smashed
1 tsp salt
1/3 cup water
1 tbsp unsweetened almond or oat milk
Add butter and garlic to a pot. Let it sizzle, then add the peas and water. Cover and cook til the peas are bright green. Add everything to a blender and puree.
Assemble:
Pour your pea puree at the bottom of the bowl. Lay your halibut on top and add the salsa.
