Roasted Figs over Ice Cream with a Tamarind Glaze


20 figs, cut in half

5 sprigs rosemary

1 tbsp honey

1/4 tsp cinnamon

1 tbsp brown sugar

2 tsp vin santo (dessert wine)

1 and 1/2 cup powdered sugar

2 tbsp olive oil

2 tbsp tamarind paste

1 tbsp warm water


Turn the oven on high broil.

On a sheet pan, add the figs cut side up. Sprinkle the cinnamon, brown sugar, honey and vin santo all over the figs. Add the rosemary springs. Broil for 5 mins or until it starts bubbling.

While the figs are roasting, make the tamarind glaze. Combine the powdered sugar, olive oil, tamarind paste in a bowl. Gradually add the warm water as needed until it forms a silky but still somewhat thick sauce. (You want it to drizzle off your spoon when you pick it up)

Scoop your ice cream into bowls. Add the figs and pour over the tamarind glaze. Serve immediately.
