Pineapple Rum Yogurt Dessert
Ingredients:
3 slices of pineapple
1 cup coconut yogurt (or yogurt of choice)
1 cup blueberries
1/3 cup sugar
1 tsp lemon juice
pinch of salt
Spiced Rum Sauce
1 cup light brown sugar
1/2 cup (1 stick) unsalted butter
`1/2 cup whipping cream
2 tablespoons rum
1 tsp cinnamon
Directions:
Spiced Rum Sauce
1} Stir brown sugar and butter in saucepan over medium heat until melted and smooth. about 2 minutes.
2} Add cream, rum and cinnamon and bring to a simmer. Simmer until sauce thickens and reduced. About 5 mins
Blueberry Coulis
1} Combine your ingredients in a saucepan. Bring to a boil and simmer on low for 10 mins.
To assemble:
Add your yogurt on your serving dish. Layer your pineapple slices on top, followed by the blueberry coulis and drizzle the rum sauce in a circle all over the plate. Serve and enjoy!
