Chocolate Olive Oil Cake


2 cups coconut sugar

2 cups all purpose flour

3/4 cup cocoa powder

1 & 1/2 tsp baking powder

1 tsp salt

2 tsp baking soda

1 cup oat milk

1 & 1/2 tsp espresso powder

1 tbsp vanilla extract

2 tbsp orange zest

3 eggs, room temperature

1/2 cup boiling water

1 cup good extra virgin olive oil


1) Preheat oven to 350 F

2) Sift all dry ingredients in a medium size bowl.

3) In a separate bowl, add the sugar, olive oil and eggs. Whisk to combine. Then add in the vanilla, oat milk and zest.

4) Alternate adding in the dry ingredients and the boiling water til combine. Do not overmix as the cake will be too dense. Just til you don't see anymore flour clumps.

5) Pour batter into a 9 inch cake pan. Bake for 35-40 mins. Til a toothpick or knife comes out clean.

Garnish with powdered sugar, fresh whipped cream and strawberries or any fruit/

decorations you want.
